Mushroom and Pepper Pasta

1 - 8oz box Explore Cuisine Red Lentil Penne Pasta

2 tablespoons extra virgin olive oil

2 cloves of garlic, diced

6oz roasted red peppers- chopped

1 cup Chicken- chopped (optional)

yellow onion

1 cup chopped spinach

1 cup of red wine

16oz fresh button mushrooms- washed and diced

1 Portobello Mushroom- washed and diced

Salt and pepper to taste

1/ 1/2 tsp Dried oregano to taste

Vegetable Broth

Fresh parsley, chopped

Parmesan cheese, regular or vegan


Cook pasta Drain well.

While the pasta is cooking heat the olive oil in a deep

large skillet over medium-high heat. Add the garlic and

for 1 minute, stirring constantly

Add the red pepper and onion- cook for 2-3 minutes.

Slowly add the wine, and whisk about 2-4 minutes.

Add all the mushrooms, salt, pepper, oregano. Cook over

medium-high heat for about 10 minutes

Add vegetable broth.

Serve over cooked red lentil pasta, sprinkle with fresh

parsley and parmesan cheese.
