Chocolate- Chocolate Chip Granola Recipe

  • 4 cups rolled old-fashioned oats

  • 1 cup rice cereal

  • ¼ cup oat flour (You can Buy or make your own in food processor)

  • ¼ cup cocoa powder

  • ½ teaspoon kosher salt

  • ¾ cup Olive oil

  • ⅓ cup brown sugar

  • ¼ cup soy butter

  • ½ cup mini chocolate chips

  • ½ cup Maple Syrup

  • 1 teaspoon vanilla

Preheat oven to 325º F. Combine oats, crisped rice, coconut, brown sugar, oat flour, chips, cocoa powder, and salt. Mix well.

Combine soy butter, olive oil, maple syrup and vanilla. Heat for 30 seconds in microwave.

Combine with dry ingredients and mix well.

Line 13x9 baking pan. Line with parchment paper Pour granola bar mixture into pan and Press mixture evenly and flat.

Bake for 25 minutes. Cool completely before cutting.
